Baking

I like to make my own food from scratch. Being gluten intolerant has been a challenge but it has increased my knowledge of what is in our packaged food. I grind most of my own flour from organic brown rice and buckwheat. It is so good to know exactly what we are eating.

Yesterday I made savoury and sweet muffins. I only keep a few out and freeze the rest. Then just take out one or two as we want them. It's just too temping to have them sitting in the cake tins. I also made a batch of lemon cordial for PH. I'm slowly getting him off diet cola. He also scored a nice thick custard. Busy day!

Tomorrow we are going to Sydney for a couple of days. We're celebrating our anniversary and decided to do something special. It will be our first trip from the Granite Belt. Where we lived on the  Gold Coast we were 15 minutes from the airport. Now we are 3 to 4 hours away, depending on traffic and coffee stops. Can't have everything.

    1. Thank you for taking a look Selina. To answer your questions. No, I haven't always lived simply. Just wished I could. I'll be sharing more of our little house on the blog. It's just a little three bedroom brick veneer that we hope to make ours with a bit of paint and decoration.

    I followed your link from Rhonda's blog. Congratulations on your new blog which I've just read. I love your introduction and resonate with so many of your posts. I'm also gluten intolerant and grind nut flours in my Vitamix container. I do the same as you and freeze individual portions. I still thoroughly enjoy baking for everyone here as I can just pop one of my own GF muffins or bread out of the freezer.

  5. We also moved from a house on the lake where we had lived for 34 years to a house with 25 acres. Husband wanted a change and something to do since he is the sort of person who likes to be occupied and he certainly is. We have been here for about 4 years and while we know that eventually we may have to move we will enjoy it while we can. Stanthorpe is a lovely place and hope that you enjoy your time there.

  7. That lemon cordial will be very refreshing! And your gluten free muffins look delicious. I bake with spelt flour often but also use brown rice flour, buckwheat, coconut flours from time to time too. My favourite gluten free cookbook is "My Darling Lemon Thyme" by Emma Galloway. There are some yummy recipes in there! Meg:)
